Xylitol inhibits Streptococcus mutans in the presence of other sugars (except fructose). Xylitol has little aftertaste and is advertised as "safe for people with diabetes and hyperglycemia." This tolerance is attributed to xylitol's lesser effect on a person's blood sugar, and its glycemic index compared to regular sugar. Very low at 8 (Glucose has a GI of 100).
